Asian Baked Salmon with Greens

This Asian-inspired baked salmon is very simple and needs only 3 minutes preparation, and delicious with rice and seasonal greens (French beans, spinach, broccoli, bok choy, etc).

We have most of the ingredients for this recipe at Urban Harvest, but currently do not stock dark soy sauce. You will need to source this elsewhere if you don’t have any in your pantry.

Serve 4

Ingredients:

600-800g skinless salmon fillet

1/4 cup dark soy sauce

2 tbp soy sauce

1 tsp sesame oil

2cm piece ginger, minced

2 garlic cloves, minced

1 tbp honey

To serve

Rice (We assume you have rice at home, if you don't click here to purchase Trade Aid organic white rice or brown rice)

250g French green beans, trimmed

1 garlic cloves, thinly sliced

1 tbp olive oil (We assume you have olive oil at home, if you don't click here to purchase Al's extra virgin olive oil)

Salt

Method:

1. Preheat the oven to 200C. Prepare the marinade by combining dark soy sauce, soy sauce, sesame oil, ginger, garlic & honey.

2. Line a baking tray with tin foil. Put the salmon fillet (with skin) on the tray and spread the marinade all over the fish. Bake for 30 minutes.

3. Meanwhile, cook the rice. Blanch the green beans in boiling water for 3 minutes. Drain & cool under running water. Fry the drained beans in olive oil and garlic for a few minutes until just cooked and still firm. Season with salt.

4. Serve the salmon with rice and green beans.
