These wraps are like healthy tacos. Easy to make and fun to eat. The crisp cold iceburg lettuce cups offer a fresh crunchy texture against the warm pork mince. Perfect for Spring!
Serves 6
Step 1. Tahini Dressing
Ingredients…
2 Tbs tahini
3 Tbs lime juice
1 Tbs sugar
3 Tbs hot water
1/2 tsp fish sauce
1 cup canola oil
Sea salt and freshly cracked black pepper
Method…
Place all ingredients except oil in a medium sized mixing bowl. Whisk the canola oil into the bowl in a slow constant stream. Once combined, season and then refrigerate until required.
Step 2. Cucumber Salad
Ingredients…
2 cups Cuba Fruit Mart cucumber (deseeded and thinly sliced)
2 cups Te Manaia Organics mung beans
1 cup More Herbs mint (leaves)
1/2 cup Cuba Fruit Mart coriander (leaves)
1/2 red chili (deseeded) (optional)
Method…
Place sliced cucumber and mung beans in a mixing bowl. Roughly chop the mint and coriander and combine with the salad. Add thinly sliced red chili if you like a little heat. Refrigerate until required.
Step 3. Cooking Pork
Ingredients…
1/3 Cup canola oil
750 gms Harringtons free range pork mince
1 Tbs garlic (minced)
1 Tbs Cuba Fruit Mart fresh ginger (minced)
1 Tbs Cuba Fruit Mart coriander stalks (minced)
1 Tbs Cuba Fruit Mart red chili (deseeded, minced)
1 cup Cuba Fruit Mart red onion (fine dice)
4 Tbs sugar
3 limes (zest and juice)
4 Tbs fish sauce
Sea salt and freshly cracked black pepper
Method…
Heat a large skillet to medium/high heat. Add ½ the oil then cook the pork mince until it as golden brown. Remove from the pan, set aside, then place the skillet back on the heat. Place the rest of the oil in the skillet and quickly sauté garlic, ginger, coriander, chili and red onion until they begin to colour slightly. Return the pork to the skillet and stir through. Finish the pork by stirring sugar, lime juice and fish sauce into it. Remove from the heat and season with sea salt and pepper.
Step 4. Serving

12 large Iceberg Lettuce Leaves (washed and dried)
Thai Pork Mince
Cucumber Salad
Tahini Dressing
Method…
Fill your iceberg lettuce leaves with Thai pork mince and cucumber salad. Pour over a little tahini dressing and then wrap the lettuce leaves, so the filling is contained. Eat immediately, then go again.
Wish I had this recipe on Tuesday night - I evidently missed a few secret ingredients namely the limes & fish sauce. Love the sound of Al's Tahini dressing. Will try it next time!
